Yes, Fantasy Birding is now a thing, just like fantasy basketball, football or other sports.
The basic concept is simple, you pick a spot on a map to go birding the next day, then you get credit for anything posted on the real-world eBird website at The Cornell Lab Of Ornithology within a 10 kilometer radius of your location.
The motivation behind Fantasy Birding is to develop a non-commercial educational tool as well as provide a way for those who lack ability or access to participate in birding.
