Penn State Master Food Preservers Present Introduction To Home Food Preservation Feb. 13 At Cumberland County Service Center

On February 13, the Penn State Master Food Preservers will present an Introduction To Home Food Preservation Workshop at the Cumberland County Service Center, 310 Allen Road in Carlisle from 6:30 to 8:00 p.m.

This workshop will explain the basics of using a pressure canner based on current USDA canning guidelines for canning low acid foods such as vegetables and meat, how a pressure canner works and canning safety.

The program will also introduce the basics of using a water bath or atmospheric steam canner for canning high acid foods such as fruits, tomatoes, pickles, salsa, jam and jelly, the latest canning recommendations based on USDA canning guidelines including acidifying tomatoes and the use of salt and sugar, best practices for ensuring quality frozen food, such as de-activation of enzymes through blanching and best practices for drying foods safely and troubleshooting problems when drying foods.

Instructors for the workshop are Nancy Routch, Extension Educator and Jo’Ann Godshall, Penn State Master Food Preserver Volunteer.

The registration fee is $15. The University of Georgia Extension book “So Easy to Preserve” can also be purchased for $20 at the time of registration.
